Mediterranean Chicken Pasta Salad
A refreshing side dish that is sure to be a star on any table.
Ingredients
- 8 pieces of Crescent Food’s Chicken Nuggets
- 1 lb. pasta of choice (rotini is best) cooked
- 1 tomato diced
- 1 cucumber diced
- ½ cup of olives cut in half
- A handful of fresh Spinach
- A handful of fresh arugula
- 1/3 cup crumbled feta cheese
- 2 tbsp. dried oregano
- 2 tbsp. dried cranberries (optional)
- Salt and pepper to taste
Dressing
- 1/3 cup olive oil
- 1 lemon’s juice
- Salt & pepper to taste
- 1 tbsp. dried oregano
- 2 tbsp. white vinegar
- 2 cloves minced garlic
- 2 tbsp. mustard
Instructions
- Bake chicken according to package instructions. Cut the nuggets in half and set aside.
- Mix dressing ingredients together.
- In a large bowl, mix together the chicken, pasta, and veggies then add all the dressing and stir together. *I recommend adding the chicken last right before serving to remain crisp. Serve room temp. or cold.
