Mediterranean Chicken Pasta Salad

A refreshing side dish that is sure to be a star on any table.  


  • 8 pieces of Crescent Food’s Chicken Nuggets 
  • 1 lb. pasta of choice (rotini is best) cooked 
  • 1 tomato diced 
  • 1 cucumber diced 
  • ½ cup of olives cut in half 
  • A handful of fresh Spinach 
  • A handful of fresh arugula 
  • 1/3 cup crumbled feta cheese 
  • 2 tbsp. dried oregano  
  • 2 tbsp. dried cranberries (optional) 
  • Salt and pepper to taste


  • 1/3 cup olive oil 
  • 1 lemon’s juice 
  • Salt & pepper to taste 
  • 1 tbsp. dried oregano 
  • 2 tbsp. white vinegar 
  • 2 cloves minced garlic 
  • 2 tbsp. mustard


  • Bake chicken according to package instructions. Cut the nuggets in half and set aside. 
  • Mix dressing ingredients together. 
  • In a large bowl, mix together the chicken, pasta, and veggies then add all the dressing and stir together.  *I recommend adding the chicken last right before serving to remain crisp. Serve room temp. or cold.
