Garlic Thyme Lamb Chops with Stir Fried Vegetables

1 pack Grass Fed Lamb Loin Chops
3 garlic cloves, thinly sliced
3-4 sprigs fresh thyme
1 tbsp butter + 2 tbsp
1 tbsp oil
Salt and pepper to taste
3 carrots, cut into thick sticks
1 cup brocoli florets
1 tbsp butter
1/2 tsp oil
1 garlic clove, sliced
Salt and pepper to taste
For the Lamb Loin Chops:

For Lamb Chops:
Generously sprinkle salt and black pepper on both sides of the chops. Heat the oil and butter in a heavy bottom pan, add the thyme sprigs and sliced garlic, then sear the steaks for 4-5 minutes on either side over a medium flame. (While searing the lamb, remove the garlic once it’s brown). Let the lamb loin chops rest for a few minutes before serving, to redistribute the juices. Serve with stir fried vegetables.
For Vegetables:
Heat the oil and butter in a pan, then add the garlic and the vegetables. Sprinkle over salt and black pepper to taste and stir fry for 5-7 minutes, till the vegetables have some color on them. Serve with the lamb loin chops.
