Chipotle Chuck Roast

1 Crescent Foods Boneless Chuck Roast
1 Tbsp smoked paprika
1 Tbsp thyme
12 oz beef broth
2 Tbsp cornstarch
4 oz sour cream
4 oz can of adobo peppers
Juice from a small lime
Sauce from adobo peppers
Salt and pepper
Add the chuck roast to the Instant Pot and season it with salt and pepper. Sear on both sides.
Add smoked paprika, thyme, 12 oz of beef broth, garlic and bay leaves to Instant Pot.
Pressure cook for 90 minutes until the chuck roast is cooked to perfection.
Once done, take the roast out and add 2 Tbsp of cornstarch to make the gravy. Stir well until you reach your desired thickness.
Pour the gravy onto the chuck roast and let it sit for a few minutes.
In a small food processor, use 4 Tbsp of sour cream, 1 or two canned adobo chipotle peppers and 1 Tbsp of the adobo sauce from the can, a couple of pinches of salt, and the juice of 1 small lime. Give it a good pulse, then adjust it to taste.
Serve the chuck roast with the sauce on top and enjoy!
